Asuva Aed – An Apple-Flavoured Stop on a Journey Through Põlva County

Apple season does not begin with a date on the calendar. It begins when the first ripe fruit is found in the grass beneath the trees, when the morning air turns cooler and the garden fills with a sweet scent that belongs to no other time of year. In Ahja, apple season means something more. It is when Asuva Aed, an orchard on the edge of the village, truly comes alive.

The story of Asuva Aed dates back to the mid-1980s, when Arvi and Ain Ootsing began planting the first apple trees in what had once been a collective farm’s potato field. It was not yet a large-scale operation or an established business. It was simply a beginning: a handful of trees, some knowledge, plenty of experimentation and a desire to discover which varieties would thrive in the Ahja area.

Over the years, the former field grew into a flourishing orchard. One apple variety was joined by another, then a third, followed by dozens more. Pears, plums, cherries and berry bushes were planted as well. Asuva Aed became a place where fruit was not merely grown, but where the character of each variety was carefully studied and understood. Some trees cope better with harsh winters, while others need the right pollinating partner nearby. One apple tastes best straight from the branch; another reveals its true flavour only after it has been left to mature.

In this orchard, every variety has its own season, flavour and purpose.

Caring for the orchard requires attention throughout the year. In winter and early spring, the trees are pruned and shaped. During the warmer months, the family keeps a close eye on the blossom and the developing fruit. Then autumn arrives, bringing the most eagerly awaited—and busiest—time of all. The apples are picked by hand, inspected and carefully sorted. What may look from the outside like an idyllic autumn day among the apple trees is, in reality, made up of long working hours and countless familiar, well-practised movements.

Yet this work lies at the very heart of Asuva Aed’s charm. Once picked, the fruit does not disappear into an anonymous production chain. It remains within the same family and continues as part of the same story.

Ain’s brother Olav has also played an important part in the orchard’s development. A gifted all-round problem-solver, he often finds a practical way to bring Ain’s latest ideas to life. Over the years, Olav has designed and refined ingenious technical systems and technological solutions that make the orchard’s daily work smoother, more precise and more efficient. Whether the challenge involves processing fruit, organising production or creating something entirely new, his resourcefulness helps Asuva Aed move forward while preserving the distinctive character of a family-run business.

The orchard’s evolution is perhaps most beautifully reflected in what happens to the apples after they are picked. At first, the family mainly sold fresh fruit and young trees. Later, they began pressing their apples into juice. Then came another step: ciders, fruit wines and sparkling drinks made from fruit grown in their own orchard.

Little by little, the orchard also became a small craft drinks producer.

Asuva Aed’s apple juice is made from hand-picked and carefully sorted fruit. Its cider undergoes a second fermentation and matures in the bottle using the traditional method, slowly and at its own natural pace. Pears become perry, rowan berries and apples are transformed into sparkling wine, and the most concentrated expression of the orchard’s fruit can be found in its ice cider. Every one of these drinks, however, begins in exactly the same place—with fruit grown in Ahja.

That is what makes the story of Asuva Aed feel so complete. The same family grows the trees, cares for them, gathers the harvest and gives the fruit a new form. Here, the journey from orchard to bottle is not a marketing slogan. It is part of everyday life.

Growing fruit-tree saplings is another natural chapter in the Asuva story. When customers take home a young tree, they receive more than a plant. They also benefit from decades of accumulated knowledge: which varieties are suited to the local climate, what each tree needs in order to thrive and when its first harvest might be expected. Trees from Asuva Aed have found homes in gardens across Estonia, and many of them have now been bearing fruit for years.

The growth of Asuva Aed has never been rapid or loud. This is not a story about a vast factory or endlessly expanding production. It is a story of growing deeper—towards new varieties, new skills and new flavours. Saplings followed fresh fruit, cider followed juice, and apples were joined by pears, rowan berries and plums. One endeavour grew naturally from another, just as a tree adds a new ring with every passing year.

During apple season, all those years of work become visible. Every crate holds the spring blossom, the warmth of the summer sun, the rainy days and the sweetness gathered as autumn approached. One apple may become a snack tucked into a child’s schoolbag. Another may find its way to the family table as juice. A third may not be opened until much later, when the orchard outside is already resting beneath the snow.

Located on the edge of the village of Ahja, Asuva Aed is one family’s decades-long conversation with the soil, the trees and the changing seasons. It is quiet proof that an astonishing variety of flavours can grow in even the smallest of places.

These are exactly the kinds of local producers and flavours we hope to welcome to Metsa 7 Hotel and Restaurant in the future. Our vision is not simply to offer guests a place to sleep and something to eat, but to give them an opportunity to truly taste Põlva County. Apple juice, cider and other products made from locally grown fruit carry within them the soil of this place, its seasons and the work of its people. This is an authentic taste of the region—one that we would be proud to bring to the tables of our guests at Metsa 7.

You can discover more about Asuva Aed, its orchard and its products at asuva.ee, where you will also find its online shop. If you cannot make the journey to Ahja in person, the website offers the easiest way to experience Asuva Aed’s apple juice, cider, perry and other fruit-inspired flavours.

In autumn, when the branches bend beneath the weight of the fruit and the apple baskets begin to fill once again, the whole orchard seems to offer one simple reminder:

Good stories do not ripen overnight.

They grow.
